I have been drinking store bought almond milk for years! Even before I switched to a full plant-based diet, I never liked milk from cows. So, things like almond milk and coconut milk have been what I have opted for. I always knew that you could make your own almond milk but my impression was that it was way too complicated and time consuming.
One day I got curious and decided to look up exactly how it was made and how long it would take me. I'm here to tell you it is SO EASY and SO DELICIOUS! After making it for the first time, I have been making it fresh at least once a week. I put it in my coffee every morning to make it so creamy and delicious. I also drink a glass a day because I really can't emphasize enough just how good it is. After only ever having store bought almond milk, I had no idea that it could taste this good.
The recipe is really simple. The only "special" thing you need is a cloth to drain the almond milk mixture. You can go on amazon and search "nut milk bags" and buy them on amazon. I, however, went to target and bought a cheese cloth. The nut milk bags are around $15 and I bought this cheese cloth for $2.99. It can be found where the kitchen utensils and supplies are. It is a simple cloth that I lay on top of a bowl and works perfectly! I imagine you could use any thin cloth. Mine is 100% cotton and thin enough to easily strain the almond milk. However, next time you're at Target, just add this cheese cloth to your shopping list!
1 cup of raw almonds that have been soaked in water overnight. (This is literally the only part of the recipe that requires any prep. I just put the almonds in a bowl before going to sleep and make sure they are fully covered with water.)
2 pitted medjool dates for sweetness
Splash of vanilla - about 1 teaspoon or more for stronger flavor
5 cups of water - you can add less for a thicker consistency or more for a thinner consistency
Combine all ingredients in a blender and blend until well blended. I usually blend for 1-2 minutes
Place cloth over a large bowl - large enough to hold at least 5 cups of water
Pour the mixture over the bowl and cloth
Pick up cloth at all four corners and squeeze until all of the liquid is in the bowl
Pour into a covered container and refrigerate!
It lasts for 5-6 days but the fresher it is, the better it tastes!
